인삼의 육류제품에서의 사용증진을 검토하고자 항산화효과를 pH5.6에서 조사하였다. 인삼분말을 돼지고기와 닭고기에 각각 첨가하였을 때 10% 수준까지 첨가수준이 증가할 수록 항산화 효과가 증가하였으나 지방산화 억제폭은 첨가수준 증가에 따라 감소하였다. 시료에 인삼을 물 추출물, 에탄올 추출물 및 추출박으로 분획하여 첨가하였을 때 물 추출물과 추출박의 첨가는 지방산화를 억제하였으나 첨가 수준의 증가에 따른 항산화 효과는 뚜렷하지 않았다. 한편 에탄올 추출물을 시료에 첨가하였을 때는 돈육에서는 항산화 효과가...
