본 실험에서는 더덕 에탄올추출물의 항산화효과를 검토하고자 수소공여능과 과산화물가 및 TBA가를 측정하여 비교하였다. 더덕 에탄올추출물의 항산화효과는 추출방법에 따라 약간의 차이가 있었고, 가열추출한 경우에는 추출물의 수율이 높고 갈변반응물질이 생성되어 함께 추출되었다. 수소공여능을 측정한 결과, ginseng reflux extract(GSRE) <ginseng cold extract(GSCE) <cultivated $dar{o}dar{o}k$ reflux extract(CDRE) <wild $dar{o}dar{o}k$ reflux extract(WDRE) <cultivated $dar{o}dar{o}k$ cold extract(CDCE) <BHA<TBHQ<wild $dar{o}dar{o}k$ cold extract(WDCE)의 순으로 산더덕 상온추출물의 수소공여능이 가장 켰으며, 가열추출한 경우 수소공여능은 떨어지는 것으로 나타났다. 한편, 유지에 대한 항산화효과는 대두 유기질의 경우 BHA<WDCE<WDRE<GSCE<GSRE<CDCE<CDRE의 순이었으며, 돈지기질의 경우 BHA<WDCE<WDRE<GSCE<CDCE<GSRE<CDRE<TBHQ의 순으로 나타났다. 이들 결과로 미루어 볼 때, 더덕 에탄올 추출물은 in vitro 상태에서 상당한 수소공여능과 항산화효과를 나타내었으며, 인삼 추출물의 항산화작용은 수소공여능에 기인하기 보다는 다른 mechanism에 기인되는 것으로 사료되었다.
This study was carried out to investigate the antioxidant activity of the ethanol extract from $dar{o}dar{o}k$ compared with that from ginseng. The peroxide values and thiobarbituric acid values were examined in order to estimate the antioxidant activity of the extract in soybean oil and lard. The antioxidant activity of the extract in soybean oil increased in the order of BHA<wild $dar{o}dar{o}k$ cold extract(WDCE)<wild $dar{o}dar{o}k$ reflux extract(WDRE)<ginseng cold extract(GSCE)<ginseng reflux extract(GSRE)<cultivated $dar{o}dar{o}k$ cold extract(CDCE)<cultivated $dar{o}dar{o}k$ reflux extract(CDRE) <TBHQ, while those in lard, in the order of BHA<WDCE<WDRE<GSCE<CDCE<GSRE<CDRE<TBHQ. From these results, ethanol extract from $dar{o}dar{o}k$ showed significantly stronger antioxidant activity than that from ginseng.
