Chlorine dioxide (ClO2) has been widely used as an effective disinfectant to control fungal contamination during postharvest crop storage. 노화과정은 활성산소(reactive oxygen species, ROS)와 우리 체내 항산화 능력 간의 불균형으로 인한 산화스트레스(oxidative stress)와 밀접한 관련이 있는 것으로 알려져 있다[1]. 산화스트레스는 심혈관계 질환, 호흡기, 근골격계 질환 같은 노인성 질환과 수명에 영향을 미친다[1,2]. 산화스트레스는 다양한 요인에 의해 발생하는 것으로 보고되었으며[1,2], 그 중 호모시스테인은 산화과정을 통해 동맥혈관에 급격한 산화스트레스를 유발하여[3] 동맥경화증의 독립적인 위험인자로 알려져 있다.
