This study was done to investigate the characteristics of eating habit and the level
of school meal satisfaction for students with visual impairment, and thus to improve
their nutrition and to provide the basic material to enhance the quality of school meal.
To achieve the goal, 174 students with visual impairment residing in the dormitory of
twelve schools throughout the nation took part in the survey. The result of the
research is as follows. Firstly, for the characteristics of eating habit on the students
with visual impairment residing in the dormitory, the rate of the students eating
breakfast (average 5~6times a week) was the highest, but that of the students
having breakfast(average 3∼4times a week) was the lowest. For the reasons that
students don’t eat at the school cafeteria, ‘because they don’t like the diet’ was the
highest, followed by ‘because they don’t have much appetite’ and ‘because they want
to eat out’. For their favorite diet, ‘Korean dishes’ were highest, followed by
‘Western dishes’ and ‘Japanese dishes’. Secondly, the level of school meal
satisfaction was by and large more than middle level, the highest level of the total
school meal satisfaction was ‘the frequency of their favorite dish’, followed by ‘the
appearance of food’ and ‘the number of the side dishes’ whereas the lowest was
‘the balance of diet’. The satisfaction level by each meal was very high, and
specifically lunch showed the highest satisfaction level but dinner, the lowest. On the
basis of the result of this research, the matters required in the subsequent
researches were suggested in the limitations.
